We are known for our hearty yet refined rustic style of food, which consists of cooking large pieces of meat over a fire, roasting whole pumpkins, hot smoking whole sides of salmon, or gently cooking vegetables with smoke to enhance the ingredients to give the authentic flavour of the highlands.”

We now call Fitzroy Falls home - the heart of Graze. It’s where you’ll find our beautiful wedding venue and The Burrow Café, all nestled in the stunning Southern Highlands. Whether you’re planning your big day or just stopping by, we’d love to welcome you.

our food philosophy

“Like many young chefs, I thought that creative flavour combinations, techniques and platting styles were the crucial elements of good food, and while they are essential, the most important thing is the produce, the ingredients.
Once you understand this, the purpose of a chef really becomes clear: to use your skills in a modest and controlled way that allows the ingredients to be the best they can be, to manipulate the ingredients only with the sole focus of improvement.
That's why I knew if I wanted to serve the best food I could create, I needed to focus on the ingredients, so that's why I started 16 Stables, a regenerative fruit, vegetable and herb garden to be able to influence and grow the building blocks of cuisine, the fundamental elements of great food, great produce.”

I’m originally from the northeast of England, and I’ve had a passion for food for as long as I can remember - it’s in my blood. My father was the one who first inspired me to cook, and my oldest brother is also a chef. Food has always been at the heart of my world, long before I ever stepped into a professional kitchen.
I’ve spent my entire adult life in kitchens across the globe - from 3 Michelin-starred restaurants to bustling bistros, boutique lodges, and large-scale hotels and casinos. I’ve done it all, from fine dining to major events.
That journey eventually led me into restaurant development and consultancy, where I opened six restaurants in just two years and worked with some of Australia’s biggest food companies. Food isn’t just my career - it’s my life, and my never-ending passion.
